RECIPE: Grilled Chicken with Roasted Vegetables

The Recipe - You’ll need:

  • 2 boneless skinless chicken breasts

  • 1 large sweet potato, cubed

  • 1 cup broccoli florets

  • 1 red bell pepper, sliced

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • 1/2 tsp paprika

  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 425°F (220°C). Line a baking sheet.

  2. Toss sweet potato, broccoli, and bell pepper with 1 tbsp olive oil, garlic powder, salt, and pepper. Spread on baking sheet.

  3. Roast veggies for 20-25 minutes, flipping halfway.

  4. While veggies roast, season chicken with salt, pepper, paprika, and a little garlic powder. Drizzle with remaining olive oil.

  5. Grill chicken over medium-high heat for 5-6 minutes per side (or until cooked through), or cook in a grill pan/skillet.

  6. Serve hot with roasted veggies on the side. Feel free to drizzle with a little lemon juice or tahini if you’re feeling fancy.
