The Recipe

Ingredients:

- 4 chicken breasts

- 2 tbsp harissa paste

- 1 cup dried green or brown lentils, rinsed

- 1 large bunch of kale, stems removed and leaves chopped

- 1 red onion, sliced

- 2 bell peppers, sliced

- 3 cloves garlic, minced

- 2 tbsp olive oil

- Juice of 1 lemon

- Salt and pepper to taste

- Fresh cilantro or parsley for garnish


Recipe Instructions

1. Preheat your oven to 400°F (200°C).

2. In a large bowl, toss the chicken breasts with 1 tbsp of harissa paste until evenly coated. Set aside.

3. In a separate bowl, combine the lentils, kale, red onion, bell peppers, and garlic. Drizzle with olive oil, lemon juice, and the remaining harissa paste. Season with salt and pepper and toss to combine.

4. Spread the lentil and vegetable mixture evenly on a large baking tray.

5. Place the harissa-coated chicken breasts on top of the lentil mixture.

6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
