  • 2 small cauliflowers, cut into 4 steaks (about 1.5 cm thick each)

  • 2 chicken breasts, halved horizontally

  • 2 tbsp harissa paste

  • Zest and juice of 1 lime

  • Mint sprigs, for garnish

  • Lime wedges, to serve

  1. Preheat the oven to 400°F (200°C) and line a baking tray with parchment paper.

  2. Prepare the Cauliflower Steaks: In a bowl, toss cauliflower steaks with 1 tablespoon of olive oil, fennel seeds, salt, and pepper. Place them on the baking tray and roast for 20-25 minutes or until tender and golden brown, flipping halfway through.

  3. Marinate the Chicken: In a separate bowl, combine the harissa paste, lime zest, lime juice, and remaining olive oil. Season with a little salt and pepper.

  4. Cook the Chicken: Heat a large skillet over medium heat. Brush the chicken breasts with the harissa marinade on both sides. Add them to the skillet, cooking for 4-5 minutes per side or until cooked through and golden.
